Before we start: you've almost certainly eaten tatsoi before. The mild, mustardy leaves often show up in mixed salad greens, so -- surprise! -- you're probably already acquainted. What's so great about this green? Once you track it down, (aliases include tat soy, tat soi, broadbeak mustard, spoon mustard, spinach mustard, and rosette bok choy), it'll quickly become one of the most versatile green vegetables you know. It's friendly with a number of cuisines and preparations, much like the rest of its brassica siblings.

Happy Independence Day to everyone! Hope you all enjoy the holiday and stay safe. With so many members traveling (and that incluces Cyndi and Martha too!) the summer orders get challenging. Please give your host every consideration by letting her know as early as possible when you will be out; also get a sub to cover your spot! If your shares seem a little different at times, it's probably because we're doing some creative ordering to continue through the summer and still cover our costs. Enjoy the goodness and bounty!
