Try this kale recipe from one of our members!



 
 
Beans and Greens Soup
 
2 TBS olive oil
1 lg onion
2 med garlic cloves, crushed
1 bay leaf
1-2 stalks celery
1-2 medium carrots
1 tsp salt
Blk pepper to taste
5 Cups water or veg broth
2 cups cooked white beans
1/2 lb fresh chopped mixed greens:
Kale, collards, spinach, or escarole
(the kale and spinach are great together)
freshly grated nutmeg
 
 
In a saucepan, add oil and saute the onions and garlic over low heat.  When onions are soft, add celery, carrot, salt, and pepper.  Stir and saute another 5 minutes.  Add broth or water and bay leaf.  Cover and simmer about 20 minutes.  Add cooked beans and greens.  Cover and continue to simmer, over very low heat, another 15-20 minutes.  Garnish as desired with grated nutmeg ( I've actually never done this part).  I always forget, LOL.
